This week we celebrated by sweetheart’s 30th birthday. His request was fruit pizza instead of a cake. (Yay- because that’s also one of my favorites). It’s a treat my mom used to make for us and it’s so much fun to make. We’ve done a “fruit pizza bar” at parties, allowing guests to create their own versions. It’s kid approved and healthier than some other cake alternatives.
For this one, I used pineapple to cut out numbers, then added one candle for him to blow out. A simple, delicious celebration.
Step 1. Make your crust: sugar cookie! Recipe below.
Step 2. Make your sauce: cream cheese based fruit dip. Recipe below.
Step 3. Add your toppings: fruit.
Sugar Cookie Ingredients:
- 2-3/4 c Flour
- 1/2tsp Baking Soda
- 1tsp Baking Powder
- 1/4tsp Salt
- 1-1/2c Raw Cane Sugar
- 1tsp Cream of Tarter
- 1tsp Vanilla
- 1 Egg
- 1c Butter, room temperature
Preheat oven to 350*. Mix all dry ingredient then slowly mix in butter and egg until combined. Grease a pizza or pie pan and press dough into bottom, about 1/4″ thick. Roll remaining dough into 1″ balls for cookies. Bake crust until edges are golden (will vary per pan, but mine baked approx. 20 min). For the cookies, bake for 10 minutes. Let your crust cool before adding your sauce layer.
Cream Cheese Fruit Dip:
- 1 block of Cream Cheese
- 2tbsp Honey
- 1tsp Vanilla
Once cream cheese is at room temperature, mix all ingredients until it becomes slightly fluffy.
