I love baking with oats. From oatmeal cookies, to making my own oat flour for recipes- it’s a staple in my kitchen. Lately I’ve been craving fruit/ nut bread but wanted something made with oats. I came across this recipe on Pinterest, then tweaked it to make it my own.
- 2 bananas (or 1c applesauce)
- 2 eggs
- 1/4c coconut oil
- 2c oat flour*
- 1tsp. baking powder
- 1/2tsp. salt
- 1/4c maple syrup or honey (optional)
- 2c Mixed dried fruit and nuts
Preheat oven to 350˚F. Coat a loaf pan with cooking spray. In a large mixing bowl, mash the bananas until no longer chunky then mix with eggs and oil. Add the oat flour, baking powder, and salt, fruit and nuts- blend well. Pour the batter into the loaf pan and bake for 25 to 30 minutes. Let cool before cutting.
* To make oat flour, place 2 cups of gluten-free oats in a food processor and process on high speed until oats achieve a powder-like consistency, about 1 minute.
